Pick a pint of blueberries and make my delicious blueberry bars.
I’ve been meaning to write this for a while … and, luckily, blueberries are still in great supply. I love to pick my own at a local farm … but farm stands and markets have the same berries that have been picked with the same care. I devised this recipe to combine both shortbread and that bubbly, saucy blueberry filling that you get in a pie…. Here’s what to do:
Mix up a simple batch of shortbread… there are many good recipes online. I would double the batch to fill a 12 x 16 jelly roll pan. Preheat oven 350 degrees.
Next, press the dough into the pan. The great thing about shortbread is that it has enough butter in it that there is no need to prepare the pan… although I suggest a piece of parchment on the bottom to aid in the ease of removing the bars once it has cooled.
Using your fingertips, create an even layer of dough in the bottom of the jelly roll pan.
Once it’s even, you are ready to fill with the blueberries. In a medium bowl, mix six cups fresh blueberries with 3/4 cup brown sugar, 1/2 cup all-purpose flour, 1/2 cup cold, unsalted butter cut into small cubes, and two teaspoons of ground cinnamon . Toss well, and add 4 Tablespoons tangerine juice or the juice of a fresh orange. Stir gently to mix.
YUM. I always taste the blueberries at this point, and the fresh tangerine juice just works magic in this mix. Spread the prepared berries over the shortbread.
SPREAD EVENLY…
Place in the oven, and bake for 30-35 minutes until some of the berries have burst and made a marvelous, thick sauce. Remove from oven, and cool for one hour. Cut into generous squares and serve with ice cream or whipped cream.
